Mustapha's piment forte - Moroccan hot red chile pepper - is produced from little red chile peppers grown on the lush valleys at the foot of the High Atlas Mountains to the northeast of Marrakech. Although a native of the New World chiles are now essential to Moroccan cuisine. When fresh these tiny red hot chiles are ground to produce Morocco's most famous condiment, harissa, and when they are dried they are ground into piment fort, and indispensable ingredient for soups, tagines, roasts and spice blends.
